Viral Sweet Potato Beef Cottage Cheese Bowl
Cottage cheese is the new food in town and it’s taking over kitchens everywhere. Move over cauliflower, there’s a new kid around.
Cottage Cheese Is All the Rage
If you live inside the internet like I do, especially if you’re into health and fitness, you know high protein is basically what everyone is into right now. Creators are constantly posting recipes showing how to eat really delicious that is high protein. Cottage Cheese is basically the most popular food right now to achieve just that.
Sweet and Savory
Whether you’re craving something dessert-ish or dinner-ish, cottage cheese is your jam. You can blend it to make a sauce, add pudding mix to make it a dessert or season it to make it a delicious filling for pasta instead of using ricotta cheese. (Yes, I have done all of this). Ha.
Viral Sweet Potato, Beef, Cottage Cheese Bowls
I am so obsessed with this receipe, I made it two weeks back to back. The viral video is about making it as hot as you can. People add hot honey, jalapeños, chili flakes, chili crunch! I am sweating just thinking about it. Ha! So I created my own more “mild” version of the popular recipe for all of us who don’t like it too hot.
Here is the recipe:
1-2 Pounds of Ground Beef or Turkey
1-2 Sweet Potatoes – Roasted – I added olive oil, salt, pepper, and a dash of cinnamon to bring out a little of the sweetness.
1 Packet of Taco Season (I use Siete Mild – I can’t do hot, but you can do a spicy packet).
1/2 Cup Cottage Cheese (I use Good Culture) – it’s literally the best
1/2 Avocado (cut up) – you can use a full one if that’s what your heart wants.
Drizzle of Hot Honey – I am a wimp so I don’t love super hot foot, but you can add add much as you want.
This is how easy it is. Roast sweet potatoes with some olive oil or avocado oil, salt, pepper and whatever seasonings you want. You can put in air fryer or bake at 425 for 30 mins.
Cook meat as normal, add in taco seasoning, put on plate/bowl with roasted sweet potatoes, then top with cottage cheese, avocado, and drizzle with hot honey. It’s SO good!
