It’s corn! A big lump with knobs. It has the juice (it has the juiceeee). I can’t imagine a more beautiful thing.

Air Fryer Corn on the Cob
No joke, this recipe could not be easier. Plus, it will forever change how you make corn on the cob.
Ingredients:
- 4 ears of corn, shucked.
- 1 tablespoon olive oil
- Salt and pepper
Directions:
- Rub corn evenly with olive oil and season to taste with salt and pepper.
- Place your corn in air fryer, leaving space between each piece.
- Set your air fryer to 370 degrees and cook for 15 minutes.
- Lightly brush corn with melted unsalted butter and enjoy!
Avocado and Corn Salad
This salad is the definition of refreshing. We suggest bringing it on a picnic or serving aside your favorite BBQ staples.
Ingredients:
- 4 ears of corn, shucked and cooked (use air fryer method above!)
- Pint of cherry tomatoes, quartered
- 2 avocados, diced
- 1/2 red onion, diced
- 2 tablespoons olive oil
- 2 limes, juiced
- 2 garlic cloves, minced
- Salt and pepper
Directions:
• In a large salad bowl, combine shaved corn kernels, tomatoes, avocados, red onion, and garlic cloves.
• Add olive oil and lime juice, mix to combine.
• Season with salt and pepper to taste.
Zucchini and Corn Frittata
Meet your next meal prep essential. Make this ahead of time and enjoy it for breakfast, lunch, or whenever!
Ingredients:
- 6 eggs
- 1 zucchini, thinly sliced
- 1 cup of frozen corn, cooked
- 1/2 yellow onion, thinly sliced
- 1 tablespoon olive oil
Directions:
- Preheat oven to 400 degrees.
- In a large bowl, whisk eggs together and season with salt and pepper.
- Over medium heat, add oil into a cast iron skillet and sauté onion until soft and lightly caramelized, about 8-10 minutes.
- Add in eggs, corn, and zucchini, and spread the ingredients evenly. Cook for about 2 minutes or until the edges turn brown.
- Place the skillet in the oven and cook for 10 minutes. For extra crispiness, broil on high for 1-2 minutes.
